White Wine Sauce: Accent - Vermentino

We used our Vermentino which is an Italian grape varietal that has a similarity to Sauvignon Blanc or Chenin Blanc and is so light, crisp and super delicious! Even though we love drinking a great glass of wine more than anything, you can never go wrong to adding some wine to your favorite recipes. When choosing a white wine to add to a recipe it’s important to pick a crisp, dry white wine that will compliment what you are pairing it with instead of overpowering it, it is meant to Accent the dish and bring all the flavors together. Our white wine sauce goes well with seafood, chicken, pasta and even oven roasted or grilled veggies.

For our recipe we used fettucine and cut up salmon and crawfish patties to add to our sauce topped off with freshly grated parmesan and it was so tasty! Another suggestion that would go so well with this sauce would be any pasta of your choosing with shrimp, mushrooms and spinach. If you like a little more of a creamy sauce, you can add some heavy cream to stir in at the end and it is equally as delicious. We would suggest adding some extra spices if you are going to add the heavy cream and we always recommend adding freshly grated cheese to top it off! Whatever you decide to pair this sauce with you won’t be disappointed, so let’s dig in!

This Vermentino based white wine sauce is so light and delicious it's guaranteed to be a hit! If you like a little extra spice, add in some extra crushed red pepper or even cayenne pepper for an extra kick. This recipe is perfect for pasta, seafood chicken and veggies. Make it tonight, start to finish in less than 20 minutes!

1. Add water to pot and bring to boil for pasta. 2. Once water is boiling add pasta and cook for 7-10 minutes depending on texture preference, stir occasionally. 3. Place a separate pan over medium heat, melt butter then add garlic stirring for a minute or two until garlic is lightly browned and fragrant. 4. Add white wine and stir until incorporated. 5. Lower temperature and add herbs, salt and pepper, let simmer until pasta is done about three minutes. 6. For a creamier sauce add 1/4-1/2 C. heavy cream and let simmer for a minute. 7. Add ~1/4 C. of pasta water to sauce pan, drain pasta then add pasta and cooked meat of choice to sauce pan stirring until stirring until fully coated. 8. Plate pasta, add freshly grated parmesan cheese and serve! (:
